This colourful salad is great as a side dish for BBQ’s, picnics, dinner in front of the TV… It even works great as a stand alone meal if you add some protein and will provide an easy lunch for a couple of days.
1 packet microwave basmati rice
3-4 spring onions
2 handfuls baby spinach leaves
2 handfuls bistro-style or baby leaf salad
1 bunch fresh mint
Handful fresh parsley
4-5 artichokes in oil
4-5 sundried tomatoes in oil
100g feta cheese
Cook the rice according to the packet instructions and tip into a large bowl to cool whilst you prepare everything else.
Wash and trim the spring onions and chives. Pick and wash the mint and parsley leaves. Chop these, the spinach and salad leaves, the artichokes and sundried tomatoes into small pieces and add to the bowl. Zest and juice the lemon and add to the bowl. Mix everything together then crumble over the feta and add a little black pepper.
To make this a complete meal add cooked chicken, ham or tuna or for a vegetarian option some roasted, spiced chickpeas or marinated tofu.
